Ingredients :
2 cup lentil
4 cup vegetable broth
2 medium onion
2 inches ginger
black pepper as required
2 teaspoon coriander leaves
salt as required
2 large carrot
4 tablespoon virgin olive oil
5 cloves garlic
2 teaspoon turmeric
3 bay leaf
1 tablespoon lemon juice
2 medium tomato
Method :
Step 1 Saute onions and carrots
To prepare this enticing dish, first, on medium flames, take a heavy-bottomed pot and heat oil in it. When the oil is hot enough, add the chopped onions and saute till they are soft, for about 3-5 minutes. Then add chopped ginger, chopped garlic, chopped carrots. Saute all the ingredients and cook, stirring for about 5 minutes.
Step 2 Cook the dal with other ingredients
Next, add in the chopped tomatoes and turmeric powder. Cook for another 5 minutes and then add the rinsed red lentils with vegetable stock, turmeric, pepper and bay leaves. Stir it well and bring it to a boil.
Step 3 Blend the mixture and serve hot
Reduce the flame from medium-high to low and let the soup simmer. Cover the pot with a lid partially until the lentils are tender. Once done, remove from heat and blend the prepared mixture. Add in the lemon juice. Garnish with coriander leaves and serve hot.
