Handi pasinda

Ingredients :

1 kilograms cubed mutton

1 teaspoon turmeric

1/2 cup chopped coriander leaves

1 1/2 teaspoon garlic paste

1 cup yoghurt (curd)

2 teaspoon garam masala powder

2 tablespoon salt

1 cup fresh cream

1 teaspoon sugar

1 1/2 teaspoon ginger paste

1/2 tablespoon powdered black pepper

2 tablespoon red chilli powder

1/2 cup refined oil

1 tablespoon cashew nut paste

Method :

Step 1 Marinate mutton for an hour

Take a large bowl and add cubed mutton pieces in it along with yoghurt, cashew nut paste, ginger-garlic paste, red chilli powder, turmeric powder, garam masala powder, salt and black pepper powder. Mix well all the spices with mutton and keep aside for one hour.

Step 2 Caramelize sugar

Next, put a large pan on medium flame and add sugar in it along with a little water. Stir it well and let the sugar caramelize. Once done, keep it aside for later use.

Step 3 Fry the marinated mutton and start preparing the gravy

Once the mutton pieces are marinated, add oil in a kadhai and when it is hot enough, fry the pieces until tender and brown in colour. Once the mutton is fried, add 2 cups of hot water in it and cook for some time on low flame to make a thick gravy.

Step 4 Add cream and garnish with coriander leaves

Once the gravy is thick, add the caramelized sugar and mix well. Then, garnish with cream and coriander leaves. Mix well and turn off the burner. Stir well and serve with rice or naan.
