Pakora

Ingredients :

26 teaspoon Gram flour (besan)

1/2 dash baking powder

1 small finely chopped onion

1 teaspoon dried fenugreek leaves

For Garnishing.

1 tablespoon chopped coriander leaves

For The Main Dish

2 cup yoghurt (curd)

1 teaspoon Refined oil

1/2 tablespoon green chilli sauce

1 teaspoon mustard seeds

6 curry leaves

2 pinch powdered black pepper

1/2 teaspoon powdered turmeric

1/2 teaspoon powdered garam masala powder

1 cup Water

1/2 tablespoon ginger paste

1 teaspoon cumin seeds

1 pinch asafoetida

3 pinch salt

2 red chilli

1 teaspoon Red chilli powder

Method :

Step 1

Mix 1/2 cup or 24 teaspoon gram flour, 1 small finely chopped onion, a pinch of soda-bi-carbonate, 1 tsp dried fenugreek leaves, salt, black pepper and red chilli powder for making pakoras. Add water to make a thick batter of dropping consistency. Take a whipper or a forked spoon and beat the mixture till it gets fluffy. It may take some time but this step is important as if you do not beat the besan mixture, the pakoras will not be light and fluffy.

Step 2

Allow the pakora mix to rest for 30 minutes. Once again beat it well using a spoon. Microwave this mixture in a small microwave safe idli mould for 1 – 2 mins. at 100% power. Don’t forget to grease the mould with a little oil. This will prevent the mixture from sticking at the bottom. Once done, keep it aside.

Step 3

To make the tadka, take a microwave safe bowl and add oil in it. Microwave it at 100 % power for 1-2 minutes or till the oil becomes smoking hot. Use only high power pyrex glass to heat oil.

Step 4

Switch off the microwave, take out this oil and add mustard seeds, cumin seeds, asafoetida, curry leaves, dried red chilli, turmeric powder and salt. Microwave for 1 min. at 100% power again or till the tadka ingredients start spluttering and are ready.

Step 5

To this tadka, add chilli-ginger paste and microwave for 2 mins. at 100% power. You must ensure that the chilli paste is cooked. Microwave timings and temperature may depend entirely on your microwave make.

Step 6

Take a large bowl and add curd , water and 2 teaspoon gram flour to it. Beat curd, water and gram flour to make a smooth mixture. You must again beat it vigorously so that no lumps are formed. Add this mixture to the tadka and red chilli mixture. Microwave for 7 – 8 mins at 100% power. Stir in between or you may burn the mixture or it may not be heated evenly. You may require to heat it a little more if you are not satisfied with its consistency. Remove from microwave and allow it to cool for a minute.

Step 7

Add the pakoras to the kadi and microwave covered at 80% power for 4 mins. You may like to adjust the power depending on your microwave. It is important to cover the kadhi with the pakoras as this will make the pakoras absorb the moisture and they will become soft and spongy.

Step 8

Remove from the microwave and transfer to an attractive serving dish. At this point you must check the seasoning and adjust it as per your taste. Garnish with chopped coriander leaves. Serve with boiled rice / roti. Kadhi serves best with steamed rice but you can also serve with with roti, Bajare ki Khichri or Paratha.
