Coconut peanut soup
Ingredients :
1 1/2 cup coconut milk
2 tablespoon gram flour (besan)
1 teaspoon cumin seeds
1/4 cup chopped cucumber
4 pinches salt
1/2 cup water
1/2 cup powdered raw peanuts
2 tablespoon refined oil
2 teaspoon chopped green chilli
1/4 cup tomato
2 tablespoon chopped coriander leaves
Method :
Step 1
Take a deep mixing bowl and combine the coconut milk and besan. Keep aside.
Step 2
Heat the oil in a deep pan and add the cumin seeds. When the seeds crackle, add the green chillies and sauté on a medium flame for a few seconds.
Step 3
Now, add the coconut milk-besan mixture, mix well and cook on a medium flame for 3 to 4 minutes.
Step 4
Add the cucumber, tomatoes, peanuts, salt and ½ cup of water. Mix well and cook on a medium flame.
Step 5
Garnish with coriander leaves and serve.
