Hare chane ke kebab

Ingredients :

500 gm soaked overnight,boiled split black gram

15 cloves chopped garlic

1 teaspoon salt

14 green chilli

1 teaspoon Red chilli powder

1 cup Refined oil

2 bay leaf

5 black cardamom

1/4 teaspoon nutmeg powder

8 red chilli

1/4 cup Mint Leaves

1/4 teaspoon salt

8 medium chopped onion

3 inches chopped ginger

30 ml juice of 2 lemons

1/4 cup chopped coriander leaves

1 teaspoon garam masala powder

5 clove

1 inches cinnamon

5 green cardamom

1 teaspoon cumin seeds

2 tablespoon peppercorns

125 gm finely chopped green mangoes

5 cup Water

Method :

Step 1

For making this yummy kebab, soak the Bengal grams overnight. Peel and dice 5 onions and peel the garlic.

Step 2

Tie the cloves, bay leaves, cinnamon sticks, black cardamoms, green cardamoms, nutmeg powder, cumin seeds, dried red chillies and black peppercorns for the spice mix in a piece of muslin or place in an infuser.

Step 3

Then, add the chopped ginger, a teaspoon salt, chopped onions, garlic and the spice bag and pressure cook for 15 minutes or till done.

Step 4

Remove the spices and grind them with a little of the cooking water to a fine paste. Grind the boiled gram using a little of the remaining water.

Step 5

Add the ground spice paste, chopped coriander, lemon juice, chilli powder and garam masala to the paste. Mix well and adjust seasoning.

Step 6

Now, for the stuffing, chop onions, green chillies, unripe mango and mint, and mix them all together. Then add the chopped ginger.

Step 7

Shape the gram mixture into 15-16 small patties on your palm. Place a little stuffing in the centre and bring the edges of the patty together to enclose the stuffing.

Step 8

Heat the oil in a girdle and put the patties on the girdle. Cook them over medium heat till nicely crisp on side.

Step 9

Then add a few patties at a time and shallow-fry on medium heat till golden brown and crisp at the bottom.

Step 10

Flip the patties over and cook the other side as well.

Step 11

Serve them hot with green chutney and tomato sauce. You can also enjoy with cheese dip.
