Saag tamatar
Ingredients :
Potatoes (Medium sized) – 5
Tomatoes (Medium sized) – 4
Onions – 4
Grated coconut – 1 cup
Ginger garlic paste – 1 tbsp
Chilli powder – 1 tbsp
Coriander powder- 1 tbsp
Turmeric a pinch
Salt to taste
Oil -2 tbsp
Milk (boiled) – 1 tbsp
For garnishing: Chopped coriander
Method :
Chop potatoes into small cubes after removing the skin.
Chop onions and tomatoes into small pieces.
Grind the grated coconut into a smooth paste.
Heat oil in a tava and add the ginger garlic paste to it.
When the paste turns brown add the chopped onions.
After the onions are fried, add the chopped potatoes with a pinch of turmeric and fry for some time.
When the potatoes become semi-soft add the chopped tomatoes, chilli powder, salt and add a glass of water and cook covered for a few minutes.
Add the coconut paste and milk.
When potatoes are cooked add the coriander powder.
Garnish with chopped coriander.
Serve with hot puris, chapattis, plain rice or pulau.
