Vegetarian curry I
Ingredients :
2 tablespoon vegetable oil
1 bay leaf
3 tablespoon minced ginger
2 teaspoon ground cumin
3/4 cup chopped tomato
1/2 pounds cubed potato
2 cup cauliflower
2 cup cubed eggplant/ brinjal
1/4 cup boiled bean green
1 1/2 teaspoon sugar
1/4 teaspoon 5 spice powder
1/2 teaspoon powdered turmeric
1 teaspoon salt
1/2 cup water
1 1/4 cup cubed,peeled sweet potato
1 cup sliced bean
3 tablespoon crushed to paste red chilli
1/2 teaspoon garam masala powder
Method :
Step 1
Heat oil and add sugar and fry for a few seconds. Then, lower heat and add bay leaf and the five spices and cook for a few seconds.
Step 2
Now, add ginger, turmeric, cumin and salt. Keep stirring and add the tomatoes, water, potatoes, sweet potatoes and cover and simmer for 15 minutes. Then, add cauliflower, beans, eggplant & red chilli paste.
Step 3
Simmer and cover for 10 minutes, reducing the heat again. Now, uncover and simmer for a further 10 minutes.
Step 4
Sprinkle hot water over the vegetables if they start to stick but be careful because you want a thick sauce that clings to the vegetables.
Step 5
Stir in the peas and simmer, covered, until the vegetables are all cooked right through. Remove from heat and blend in the garam masala.
